In Defense of Lemonade

Most lemonade is bad. Not offensive, just bad — thin, too sweet, tasting like the memory of a lemon rather than the thing itself. We've all had it at an event: sitting in a dispenser next to the real bar, handed to kids, poured for whoever isn't drinking. The consolation prize.

We think that's backwards. A great lemonade can carry a bar all by itself.

The problem with lemonade

Lemonade only has three ingredients doing the work — acid, sugar, water. There's no meat to braise, no dough to proof, nothing to hide behind. When it's bad, it's usually because someone got the ratio wrong or forgot the drink is supposed to taste like something that grew in dirt.

When it's good, it's one of the most satisfying things you can hand someone on a hot day.

What we've learned makes it great

It has to taste like lemon. That sounds obvious until you've had enough lemonade that somehow doesn't.

We want real tartness, enough sweetness to round it out, and enough ice that the first sip is properly cold. Then comes the fun part: mint torn just before it goes in, strawberry or watermelon in summer, cucumber when we want something almost savory, maybe a little salt. Condensation running down a cold glass in July does half the selling on its own.

None of this needs to be complicated. Somebody just needs to care enough to taste it.

Why the hierarchy bothers us

At most events, alcohol is the real bar and everything else is the alternative. We don't love that. Someone who orders lemonade — because they don't drink, because it's 3 PM, because they just want something cold — shouldn't feel like they got the consolation prize. They should feel like they got the thing everyone else wishes they'd ordered.

That's most of the reason this bar exists.

Where Squeeze Society comes in

We cared enough about lemonade that eventually it needed its own bar.

Squeeze Society is Feast with Fiore's mobile lemonade bar, showing up at weddings, private parties, corporate gatherings, outdoor events and cultural events across Los Angeles. Cold, tart, a little unruly around the edges, and very serious about lemonade.

Lemonade was never the consolation prize. We just needed to stop treating it like one.
