ESPRESSO + GELATO. DON'T OVERTHINK IT.

Two ingredients. That's the whole bit.

Hot espresso, cold gelato, and the exact three seconds where they meet and neither one has fully won yet. That's an affogato. There's nothing else to explain, which is sort of the point of this post existing at all.

Good espresso. Good gelato. That's the entire job.

The espresso hits the gelato and starts melting the edges immediately. For a second you've got hot, cold, bitter and sweet in the same spoonful, and nobody had to design that. It was already there, waiting for someone to just pour it.

We think about this a lot, actually — not the affogato specifically, but the instinct behind it. There's a version of hospitality that wants to add. One more element, one more flourish, one more thing on the plate to prove somebody was working back there. And there's a version that knows when something's already enough.

An affogato doesn't need anything to rescue it. If we ever add something, it'll be because we wanted it there, not because espresso and gelato weren't doing the job.

Hot on cold. Bitter against sweet. Nowhere to hide, nothing to hide behind. Done.
